| Cooked white rice (preferably cold, day-old) | 250 g |
| Raw prawns, peeled and deveined | 200 g |
| Eggs, lightly beaten | 2 |
| Vegetable oil | 2 tbsp |
| Garlic cloves, finely chopped | 2 |
| Spring onions, sliced | 2 tbsp |
| Frozen peas | 100 g |
| Fish sauce | 2 tbsp |
| Light soy sauce | 1 tbsp |
| Coconut sugar | 1 tsp |
| Freshly ground black pepper | To taste |
| Lime wedges | To serve |
| Fresh coriander | Optional, to garnish |
Cook Prawns & Eggs
Heat oil in a wok.
Stir-fry prawns until just pink, then remove.
Scramble eggs in the same pan and set aside.
Aromatics
Add garlic and spring onions, then stir-fry briefly until fragrant.
Rice & Seasoning
Add rice and peas, breaking up the rice.
Stir in fish sauce, light soy sauce, coconut sugar, and black pepper.
Finish & Serve
Return prawns and eggs, then toss until hot.
Serve with lime wedges and fresh coriander.
