Green papaya | 1 piece |
Garlic (peeled) | 3 cloves |
Fresh Thai chili | 2 pieces |
Long beans | 3 pieces |
Coconut sugar | 1 tsp |
Fish sauce | 1 tsp |
Tamarind paste | 1 tsp |
Tomatoe | 1 piece |
Lime | 1 piece |
Carrot | ½ piece |
Dried shrimps | 1 Tbsp |
Roasted peanuts | 1 Tbsp |
Prep the papaya
Peel the green papaya and shred it finely.
Do the same with the carrot.
Pound the base
In a mortar and pestle, pound garlic, chilies, and long beans.
Add palm sugar, fish sauce, tamarind paste, quartered tomato, and lime juice.
Pound lightly to release flavors.
Add shredded papaya
Add shredded papaya and shredded carrot.
Gently pound and mix well until coated with the dressing.
Finish & serve
Add dried shrimp and roasted peanuts, mix gently, and transfer to a serving plate.
Serve with sticky rice on the side.
