| Coconut milk | 400 ml |
| Beef, diced | 250 g |
| Potatoes, quartered | 2 pieces |
| Shallots, minced | 2 pieces |
| Coriander | 1 bunch |
| Fish sauce | 1 tsp |
| Coconut sugar | 1 tbsp |
| Cinnamon sticks | 2 pieces |
| Bay leaves | 2 pieces |
| Star anise | 2 pieces |
Wake Up the Spices
Heat a splash of oil in a pan over medium-high heat. Add the Massaman curry paste and stir-fry for 1 minute until fragrant.
Coat the Beef
Add diced beef and stir to coat each piece with the curry paste. Let it sizzle for a few minutes to absorb all the flavor.
Add Coconut Milk
Pour in 400 ml of coconut milk and give everything a good stir to combine.
Add the Vegetables
Add potatoes and shallots. They will soak up all the flavors and make the curry extra hearty.
Season & Simmer
Add fish sauce, coconut sugar, cinnamon sticks, bay leaves, and star anise. Simmer on low heat until the beef is tender and the potatoes have absorbed the sauce.
Serve & Savor
Spoon the rich curry over steamed rice, sprinkle with fresh coriander, and enjoy!
